Roasted Boneless Chicken with Longganisa Rice

Ingredient:
1pc Boneless Whole Chicken
1/3cup Margarine
Rice Topping:
1/3cup Margarine
1/4cup chopped onions
1/2cup chopped carrots
200grams chicken longganisa mix
1/2cup green peas
5cups cooked lefover rice
1pc egg, slightley beaten
2tbsps chopped spring onions
2tsp salt
1tsp sesame oil
Procedure:
Melt margarine in a wok. Saute onions and carrots. Add chicken longganisa mix and cook for a minute. Add peas and cooked rice. Toss constantly and continue cooking for 5 minutes.
Make a well at the center and add beaten egg. Cook egg and toss with the rest of the rice. Season with salt and drizzle with sesame oil. Let cool.
Stuff chicken with cooked rice stuffing. Do not overstuff. Extra stuffing can be served on the side. Brush chicken with margarine. Tie chicken legs together and transfer to a roasting pan. Roast in a turbo broiler at 300 degress farenhiet for about 30 minutes and another 15-20 minutes at 350 degress farenhiet. Brush again with margarine halfway through cooking time.
